Pasta with Mint Pesto and Peas

Two people asked me about the mint pesto recipe so here it is.

Changes: I used half the amount of olive oil – enough so it’s barely a puree and then thin it down with the pasta water. I didn’t have ricotta salata so I just added a little parmesan.

Here is another recipe for mint pesto that looks good and uses very little oil.
